What sounds like an odd combination, is surprisingly tasty! Not only is this salad easy to make, it is perfect for a spring celebration buffet or a weeknight cookout!
Ingredients
19 oz package frozen peas, thawed, or about 2 1/2 cups fresh peas, cooked, drained and chilled
2 cups dairy sour cream
2 teaspoons prepared mustard
2 tablespoons sugar
2 tablespoons vinegar
fresh cracked pepper, to taste
2 cups salted Spanish peanuts
In a large bowl, mix together sour cream, mustard, sugar, vinegar, and pepper. Gently fold in thawed peas. Chill at least 4 hours to allow flavors to blend. Fold in peanuts just before serving.
Yield: 6-8 side servings.
