A tasty dish to warm the cool month of March and make any eyes smile! Easy to make, this one-dish meal is pefect for a busy day--chop the vegetables beforehand to speed up the work; be sure to add the sugar and caraway seeds...they give this dish its distinctive flavor. Serve over hot mashed potatoes--to be extra Irish!
Ingredients
4 tblspns butter
1 medium onion, chopped
2 cloves of garlic, finely chopped
1 medium cabbage, trimmed and chopped
1/4 cup carrots (about 3) shredded
1 tspn sugar
1/2 tspn caraway seeds
1 lb skinless kielbasa sausage, diced
salt and fresh ground pepper
prepared mashed potatoes, if desired
In a large Dutch oven, or non-stick stockpot, melt butter. Add chopped onion, garlic, cabbage, and carrots. Cook over low heat until cabbage begins to wilt, stirring often. Add sugar and caraway seeds; stir to distribute well. Add diced sausage; cover. Cook over low/medium heat until vegetables are tender. Season with salt and pepper.
Serve over hot mashed potatoes, if desired.
Serves 4.
