Spicey! Slow cooked!
2 lbs sweet potatoes, peeled and diced into 1/2-inch pieces
1/4 cup dark brown sugar, packed
1 tspn ground cinnamon
1/2 tspn ground nutmeg
pinch of salt
2 tbspns butter, cut into small pieces
1 tspn vanilla
Combine sweet potatoes, brown sugar, spices, and salt in cold slow cooker. Blend well. Cover and cook on LOW 7 hours or on HIGH 4 hours.
Add butter and vanilla, stirring gently to blend.
Serves: 4
