Well worth the effort!
1/4 cup onion, chopped fine
2-3 tblspns oil
1 1/2-cup sifted all-purpose flour
1 1/2 tspn baking powder
1/2 tspn salt
1/2 tspn celery seed
1/4 cup shortening
1 egg, slightly beaten
1/3 cup milk
Saute onion in oil until tender, but not brown. Sift together flour, baking powder, and salt. Stir in celery seed. Cut in shortening until mixture resembles coarse crumbs. Add onion, egg, and milk, all at once, and stir just until mixture holds it shape.
Turn out onto a lightly floured surface and knead gently for 30 seconds. Pat or roll 1/2-inch thick. Cut out with 1 3/4-inch round cutter. Bake on ungreased cookie sheet for 12 minutes or until lightly browned.
Yield: 1 dozen medium size biscuits
