These muffins are so simple to make...you'll want to make them from scratch everytime!
1 cup all-purpose flour
1/4 cup sugar
4 tspns baking powder
3/4 tspn salt
1 cup cornmeal, yellow or white
2 eggs
1 cup milk
1/4 cup shortening
Preheat oven to 400-degrees F. Sift together flour, sugar, baking powder, and salt; stir in cornmeal. Add eggs, milk, and shortening. Beat just until well blended and smooth (do not overbeat). Fill greased muffin pans 3/4 full. Bake for 20-25 minutes.
Yield: 12-14 muffins.
